Welcome to hamutzim. My name is Mordechai Schram. I find my enthusiasm in cooking locally sourced, seasonal, organic food using ancient preparation and preservation techniques such as Fermenting, Souring, Soaking, and Salting. These ancient techniques increase nutritional bio availability, create a natural preservative, and make for delicious food & ferments. It also brings me joy to cook through the lens of Jewish Diaspora and Israeli cuisine.
hamutzim is a movement! By supporting local farms, and bringing seasonal, organic food and ferments to the community hamutzim helps create a local food eco-system in Mt. Airy.
Previously, I was the Executive Chef and Director of Food Services at Isabella Freedman Jewish Retreat Center in Falls Village, CT. Now living in Philadelphia, I bring you hamutzim.
