Welcome to hamutzim!
I’m Mordechai Schram, and I’m excited to share my love for cooking with you. My enthusiasm lies in creating locally sourced, seasonal, and organic dishes, all through the use of ancient techniques like fermenting, souring, soaking, and salting. These time-honored methods not only enhance the nutritional value of the food but also create natural preservatives, resulting in delicious and nutritious meals and ferments.
Cooking through the lens of Jewish Diaspora and Israeli cuisine brings me immense joy, connecting me to a rich cultural heritage that celebrates both tradition and innovation. hamutzim is more than just food—it’s a movement! By supporting local farms and sharing seasonal, organic food and ferments, we are helping to build a sustainable food ecosystem right here in Mt. Airy.
Before I called Philadelphia home, I served as the Executive Chef and Director of Food Services at the Isabella Freedman Jewish Retreat Center in Falls Village, CT. Now, from my new home in Philly, I’m proud to bring hamutzim to you.
